Ají Relleno (4 portions)


¼ Of a chopped onion
¼ Of chopped yellow chilli pepper without veins or seeds
2 Tblsp of garlic paste
¼ Lb of Chopped beef
¼ Cup of peas
1 Cup of beef broth
4 Yellow chilli peppers without veins, (previously soaked in hot water for a few seconds)

  • In a frying pan with hot oil warm up the onion, the chopped yellow chilli pepper and the garlic paste.
  • Brown it up for a few minutes on medium high heat. Add the beef, the peas, the olives and the boiled egg. Season with salt and pepper.
  • Poor in the broth and let it sit aside. Stuff the peppers and bake them in the oven for ten minutes at 140C.
