Croquetas de Yuca (4 portions)


1 Cup of cooked and smashed yuca
1.8 Oz of fresh cheese rallado
1.7 Oz of grated parmesan cheese
1 Red onion cutted in rings
½ Cup of flour

  • Put the yucca and both cheeses in a bowl and mix everything well until it becomes in a compact dough.
  • With the hands, take some of the dough and form small discs. Deep fry them until they brown up. Dry out the extra oil with a paper towel.
  • In the same frying pan, fry the onion rings (previously past in flour) until they are crunchy.
  • Serve the croquetas garnish with huancaína sauce and the onion rings.
