Olluquito (4 portions)


1 Kg. (1/2 Lbs) of clean ollucos thin sticks
Olive oil
½ Cup of chopped red onion
1 Tblsp of garlic paste
2 Tblsp of dried Panca Pepper paste
14 Oz of charqui (dried lama meat, previously hydrated and threaded)
1 Cup of beef broth
1 Tblsp of chopped parsley

  • Warm up a pot of olive oil. Add the onions and let them brown up for five minutes.
  • Place the garlic paste and the dried Panca chilli paste. Let it all cook for six more minutes.
  • Add the dried lama meat, mix well and add the beef broth.
  • Let it all cook whith the lid on for thirty more minutes at medium heat until the dried meat become tender.
  • At this point, add the ollucos. Season with salt, pepper and chopped parsley and let it all cook for twenty more minutes.
  • Serve the olluquito with sweet potato slices and white rice.
